Coeliac disease, allergy and hypersensitivity to gluten are the three intolerance conditions where a gluten-free diet is a basic recommendation. Coeliac disease often goes together with an intolerance of lactose (milk sugar) which, however, can also be the effect of damaged small intestine villi, caused by other medical conditions. A direct cause of lactose intolerance is a deficiency of lactase – an enzyme essential in the digestion of milk sugar. If the sugar is not broken down, it remains in the intestine, resulting in symptoms such as stomach cramps and pain, bloating, feeling sick and diarrhoea.

The LightBox Gluten&Lactose Free diet is designed mainly for people with a diagnosed coeliac disease in its second stage (in the first stage, an easily digestible diet should be followed) or hypersensitivity to gluten, and for those with lactose intolerance. Preparing and following a gluten&lactose-free diet on one’s own is difficult because prolamins, the proteins commonly known as gluten, as well as milk sugar are found not only in common cereal products like bread or pasta, or dairy products like milk and cheese, but also in a number of less obvious foods, including processed meat, food concentrates, mayonnaise, mustard, herbal seasonings or dried fruits.

Selecting gluten-free and lactose-free products in order to compose your diet properly requires that you carefully read the information on food labels and know the names and origin of some ingredients, such as e.g. modified starch. Moreover, you need to remember that naturally gluten-free buckwheat, millet or maize products may be contaminated with gluten, so it is essential to pay attention if they are clearly marked as gluten-free, or – a safer alternative – if they carry the licensed Crossed Grain symbol.

An extra challenge is balancing your diet so that it addresses your requirements for energy and all essential nutrients, including group B vitamins, deficient in gluten-free products, and minerals such as iron, magnesium, selenium and manganese; as well as to prevent deficiencies of protein, calcium, vitamin D and zinc, and not to make worse the deficiency of vitamins B2, B12, D3 and magnesium by eliminating dairy products.

LightBox Gluten&Lactose Free meals are prepared using a wide range of foods, including natural products and their derivatives which may in some cases cause allergies or intolerance reactions (other than to gluten or lactose). These include: eggs, fish, nuts, peanuts, soy, milk (lactose free), celery, mustard, sesame seeds. Due to this, it may be impossible for persons allergic to any of the above ingredients to use the diet.
